Memories
Sometimes you don't need much. A block of feta, creamy and salty. Good olive oil that smells of olives. A pinch of oregano. And heat.
In small tavernas on the Cretan coast, baked feta is often served as the first appetizer. It appears even before the drinks arrive: steaming hot, its surface lightly browned, the olive oil bubbling around the soft cheese.
You dip fresh bread into it. The feta melts, creamy and warm, blending with the fruity oil and aromatic oregano. It's a simple moment of perfection.
Directions
Step 1:
Preheat oven to 200 degrees Celsius.
Step 2:
Place feta in an oven-safe dish. Halve cherry tomatoes and arrange them around the feta.
Step 3:
Drizzle generously with olive oil – it will combine with the feta and tomato sauce during baking.
Step 4:
Sprinkle with oregano and pepper. Bake for 20 to 25 minutes until the feta is lightly golden brown and the tomatoes are soft.
Step 5:
Remove from oven and sprinkle with sea salt. Add finishing salt only at the very end to preserve its texture.
Step 6:
Serve with fresh bread to soak up the sauce.
