Memories

White beans have been a staple food in Crete for centuries. Cheap, nutritious, versatile. As a salad with plenty of olive oil, they become creamy and aromatic.
The beans absorb the oil, the tomatoes provide juice, and oregano and onions add texture. A dish that is filling without being heavy.

Directions

Step 1:
Rinse and drain canned beans thoroughly. Thorough rinsing removes the "canned" taste.

Step 2:
Combine olive oil, lemon juice, oregano, and sea salt and pour over the beans.

Step 3:
Add onion and tomatoes, and optionally celery.

Step 4:
Mix carefully. Let it sit for at least 30 minutes – preferably 2 hours. The beans will fully absorb the olive oil.

Step 5:
Garnish with parsley.

Step 6:
Serve at room temperature.
