This claim is subject to a condition that many oils do not meet: at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil. Thus, the question "is olive oil healthy" cannot be answered across the board. A refined olive oil from the supermarket shelf contains hardly any polyphenols, as they are lost during refining. An extra virgin olive oil with low acidity and fresh harvest, however, can significantly exceed this value. In addition, there is the fatty acid profile: olive oil consists of 70 to 80% monounsaturated oleic acid. This is more stable against heat and oxidation than the polyunsaturated fatty acids that dominate in many vegetable oils.

Polyphenols: what they are and what they do

Polyphenols are secondary plant compounds that the olive forms as protection against drought, sun, and pests. In the oil, they act as natural antioxidants: they delay rancidity and make the oil more stable under heat. The most important representative is hydroxytyrosol, to which the EFSA statement also refers. Oleocanthal is also known, which is responsible for the scratching sensation in the throat and shows anti-inflammatory properties in studies.

How to recognize polyphenol-rich olive oil

You can taste it. Polyphenols cause the bitterness and the peppery pungency in the finish. An oil that tastes mild and neutral has little of it. What many consider a flaw is therefore the opposite. What makes Koroneiki olive oil special?

Koroneiki olive oil is fruity, balanced, and shows a slight bitterness and a peppery tingling sensation in the finish. The variety is small and low-yielding, but it produces oils with a particularly high aroma density and high polyphenol content. In Crete, it is by far the most common olive variety. The growing conditions are crucial: sparse limestone soils, slopes, intense sun, little water. Under this natural stress, the plant forms more protective substances. Why acidity is important

Acidity describes the proportion of free fatty acids in the oil, a direct quality indicator. According to EU Regulation (EC) No. 2568/91, extra virgin olive oil may contain up to 0.8% acidity. Values below 0.5% are considered good, and below 0.3% very good. Below 0.25% is exceptional; this value is only achieved through healthy olives, hand harvesting, and short periods between harvest and pressing. High acidity results from damaged fruits, excessively long storage times, or unclean processing. It cannot be smelled but can be measured. How Koroneiki olives are harvested

The Koroneiki olive is small and low-yielding. Machine harvesting is barely possible in the groves around Gouves; the plots are steep, the trees old. Harvesting is done by hand, usually between November and January. At this time, the olive has reached its optimal ripeness: not yet fully ripe, but with the highest polyphenol content. What cold-pressed really means

Do healthy substances remain when heated?

Partially. Polyphenols are heat-sensitive and degrade during frying, but slower than often assumed. With gentle sautéing below 180 degrees, a significant portion is retained. If you want the full effect, use the oil raw: as a dressing, over steamed vegetables, or over legumes.
