Olive oil bottles display terms that all sound like quality indicators: cold-pressed, virgin, extra virgin, first pressing. Alongside these, there's refined olive oil, often sitting right next to them on the shelf and costing significantly less. What these terms specifically mean and how the quality grades differ is rarely explained. What does cold-pressed mean for olive oil?

Cold-pressed olive oil is obtained through a mechanical process where olives are processed without external heat. The EU Regulation (EC) No. 1019/2002 defines an upper limit of 27 degrees Celsius during the entire processing. Heat increases yield but simultaneously degrades polyphenols, vitamin E, and aromatic compounds. What constitutes the character of a high-quality olive oil is lost with heat.

Pressing or centrifuge: what is standard today

The word pressing suggests a traditional stone mill. In modern olive oil production, however, the oil is predominantly extracted by centrifugation. The term cold-pressed today refers to the temperature of the overall process, not the method. The crucial factor is whether the entire processing chain, that is grinding, mixing, and separating, remains below 27 degrees. Modern cold extraction systems process olives in closed systems and minimize contact with oxygen, which reduces oxidation. The result is qualitatively equivalent to traditional pressing, often even cleaner. We were there for the pressing. The first thing you notice is the temperature display on the machine. That is what everyone watches, not the yield. And the taste straight from the outlet is a different one from the bottle two weeks later: sharper at the back of the throat, almost grassy, the bitterness far more present. The 27 degrees are an upper limit, not a target. At the mill we work with, the temperature stays well below it.

Why temperature is crucial

Polyphenols are heat-sensitive. At temperatures above 27 degrees Celsius, they begin to degrade. This also affects vitamin E and volatile aromatic compounds, which are responsible for the characteristic flavor of extra virgin olive oil. An oil processed at high temperatures permanently loses these ingredients. The European Food Safety Authority (EFSA) has approved a health claim on this. The authorized wording is: olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. This claim requires the oil to have a sufficient polyphenol content, and that is only retained through genuine cold pressing.

Cold-pressed or refined: the difference

Refined olive oil is produced when an oil does not meet the requirements for virgin grade. This is usually due to damaged or overripe fruit, long waiting times before pressing, or storage errors. The result would be inedible raw; it would smell rancid or pungent and have too high an acidity. Refinement corrects these defects using chemical and thermal processes. The oil is degummed, neutralized, bleached, and deodorized, sometimes at temperatures over 200 degrees. The result is an oil that is odorless and tasteless. Not harmful to health, but virtually free of polyphenols, aromatic compounds, and vitamin E. The difference, therefore, lies not in safety, but in the raw material and in what remains in the end. With extra virgin olive oil, the fruits are so good that no correction is necessary. With refined olive oil, it was necessary. In practice, this means: refined olive oil is cheaper and can withstand high temperatures, but it is not suitable as a flavor carrier. Olive oil quality grades at a glance

EU Regulation (EEC) No. 2568/91 distinguishes four commercial grades and sets out the characteristics by which an oil is classified. Acidity is only one of several criteria, but the easiest to verify:
Extra virgin olive oil up to 0.8% acidity, no sensory defects, purely mechanically extracted
Virgin olive oil up to 2.0% acidity, slight sensory defects allowed
Olive oil (refined and virgin mixed) up to 1.0% acidity, predominantly refined
Olive pomace oil extracted from the press cake, lowest grade

How to recognize true cold pressing

True cold pressing is not identifiable by the word on the label alone. According to the quality standards of the International Olive Council (IOC), concrete indicators of actual quality include: acidity below 0.5%, harvest date on the bottle, varietal designation, and indication of the growing region. Cold-pressed and acidity: the connection

Processing olive oil cold-pressed is a necessary, but not sufficient, condition for low acidity. The quality of the olives, the harvest time, and the time between harvest and pressing are also crucial. Cold-pressed olive oil best develops its aroma raw or at low heat. As a dressing, marinade base, or finishing touch over grilled vegetables or fish.
