Cretan Agriculture: Small Farms, Hand Harvesting, Short Distances

The olive harvest decides what ends up in the bottle. Not the mill, not the bottling, but the timing and the method of the harvest. Crete has about 35 million olive trees, more than there are people living there, and to this day the harvest is done largely by hand. This article explains when olives are harvested, how hand harvesting works, and why every hour between tree and press counts.

When are olives harvested?

In the Mediterranean, the olive harvest runs from October to January, depending on the region and elevation. In Crete, harvesting mainly takes place in November and December, when the olives reach the transition from green to slightly violet. The timing is a trade-off. Olives harvested early, while still green, yield less oil, but with a higher polyphenol content, a more intense aroma, and a pronounced bitterness. Fully ripe, black olives deliver more yield, and the oil becomes milder and rounder, but it is lower in polyphenols and less stable. Every farmer makes this decision individually, based on experience rather than on a fixed protocol. Harvesting olives by hand: how it works

Harvesting is done with combs and nets. Large nets are spread out under the tree, then the branches are raked with handheld combs so that the olives fall into the net. Afterwards they are transferred into shallow crates, not into sacks: in deep containers, the fruit at the bottom is crushed under the weight. Hand harvesting protects the fruit. Damaged olives oxidize immediately and raise the acidity even before pressing. With the Koroneiki olive, hand harvesting is the only practical method anyway: the fruits are small, the plots steep, the trees old and irregularly grown.

Machine harvesting: faster, but not better

In flat growing regions, trunk shakers are used to set the tree vibrating. This is fast and cheaper, but it damages more fruit and also collects leaves and twigs. On slopes such as those in Crete, the method barely works at all.

Why the time between harvest and press is decisive

As soon as the olive leaves the tree, enzymes start working and the share of free fatty acids rises. Every hour of waiting costs quality, and every day of storage costs it dearly. That is why good producers follow one rule: press on the day of harvest, ideally within a few hours. This is exactly why small structures have the advantage here. Why Cretan agriculture works differently

According to the International Olive Council (IOC), Crete produces about 30% of Greece's total olive oil output. The decisive difference from industrial production lies not in quantity, but in structure: according to EU agricultural statistics (Eurostat), over 80% of Greek olive farmers cultivate areas under 5 hectares. In Crete, the olive groves belong overwhelmingly to smallholders, often within the same family for generations. Small units mean short distances, personal control, and decisions based on experience rather than on cost optimization. This structure is economically inefficient and qualitatively superior. The Koroneiki olive: Crete's most important variety

The Koroneiki olive is by far the most common olive variety on the island. It is small, low-yielding, and demanding, and it is not suited to machine harvesting. What it delivers instead is exceptional: an oil with a high polyphenol content, an intense aroma, and a naturally low acidity. It grows on barren limestone soils, on slopes, under intense sunlight. These stress conditions are not a disadvantage, they are the reason for the quality. Under stress, olive trees produce more polyphenols as a protective substance.

Processing: from mill to oil

Cold extraction below 27 degrees Celsius is the standard, as prescribed by EU Regulation (EC) No. 1019/2002. Modern centrifuges work faster and more cleanly than traditional stone mills, without any loss of quality. The oil is stored in dark tanks directly after pressing, away from light and heat. What applies to olive oil applies equally to Cretan herbs. Oregano and thyme grow on small plots on slopes. No synthetic fertilizer, no machine harvesting, no intensive irrigation. The limestone soils and the dry microclimate force the plants to produce more essential oils. Cretan oregano belongs to the Greek subspecies, which is known to be particularly rich in carvacrol. Conclusion

The olive harvest is the moment when the quality of an oil is determined. Harvested too late, picked too roughly, or left waiting too long, and no process afterwards can make up for it. Hand harvesting at the right moment, shallow crates, short distances to the mill: that sounds like tradition, but it is simply the only method that makes an acidity below 0.25% possible.
