Thyme from Crete
Dried thyme from Crete (Thymus vulgaris), grown on poor soils under intense sun, hand-harvested in the mountains of the island, gently air-dried and not ground. It is milder than oregano and gives lamb, roasted vegetables and braised dishes their typical Greek aroma.
Taste: Savoury and tart, with a slightly sweet note.
Characteristics:
- 100 % thyme from Crete
- Grown on small plots in the mountains of Crete, farmed close to nature and without synthetic fertiliser
- Hand-picked in the morning hours and gently air-dried
- Not ground and no additives
- 40 g in a resealable pouch
- Ideal for lamb, poultry, fish, stews, marinades and roasted vegetables
Our thyme grows in the hinterland of the north coast near Heraklion, on barren limestone soils in a dry climate. It is farmed close to nature on small plots and harvested by hand. We work directly with small family farms whose way of working we know.
Use: Particularly good in combination with olive oil, because the essential oils are distributed evenly in the fat. Unlike oregano, thyme tolerates long cooking times; in braised dishes it can cook along from the start.
Storage: Store dry, airtight and cool. Full aroma in the first months after opening.
Shipping within Germany: €4.49, free on orders of €50 or more.
Delivery time: 2 to 4 business days (Mon–Fri).
Shipped with DHL. You will receive delivery details and tracking information in your confirmation email.

What's behind your spice/herb from Crete-Manufacture?
From local farmers
The family farms in the mountains around Heraklion tend their small plots without synthetic fertiliser, following principles that have stood for generations. The plants grow slowly under natural stress, which gives the herb its density of aroma. We work directly with these farms, not with traders, because we know their land and their way of working personally.
Harvesting and drying
Harvesting takes place in the early morning hours, when the essential oils are most concentrated and before the heat of the day lets the aroma evaporate. The plants are hand-picked and gently air-dried, without machines, without artificial heat. We work in small batches, because that is the only method that allows consistent quality.
In the kitchen
Thyme is milder than oregano but equally aromatic. It doesn't dominate but rather complements dishes, especially lamb, poultry, fish, stews, and marinades. The flavors are best developed when combined with olive oil. We personally select every producer, not based on certificates. Those who want to buy dried thyme will find a product here that lives up to its promise.
Good to know
Thyme from the uplands around Heraklion, farmed close to nature by family farms. Hand-picked at flowering, gently air-dried, no additives. Considerably more intense and resinous than standard thyme.
With anything that needs time in the oven or pan. Classically with lamb, potatoes, roasted vegetables, bean dishes and braised meat. Cook whole sprigs along and remove them before serving, or rub the leaves between your fingers.
Store in a dry, dark place and well sealed, ideally in a jar or tin. Protect from light and moisture. This keeps the full aroma for about one to two years.
