A green color, an appealing label, or a high price are also not reliable indicators. Recognizing good olive oil requires knowledge of its origin, processing, acidity, and taste. Anyone who understands these four factors will make much better purchasing decisions.

How to recognize good olive oil?

High-quality olive oil can be recognized by four factors: fresh, healthy olives as raw material, a short time between harvesting and pressing, low acidity below 0.5%, and a fruity, slightly bitter taste with peppery pungency in the finish. Quality begins with the olive

Buying good olive oil begins long before the bottle, in the olive grove. Healthy, undamaged fruits yield a stable, aromatic oil. Damaged or overripe olives increase the acidity even before pressing. Certain varieties naturally produce oils with higher aroma density. Time and processing are crucial

Olive oil acidity: the most important quality indicator

According to EU Regulation (EC) No. 2568/91, extra virgin olive oil may contain up to 0.8% acidity. High-quality oils are significantly lower:

If the acidity is not indicated on the bottle, it is a warning sign. If only "extra virgin olive oil" is stated without further information, you have little information about the actual quality.

Why good olive oil tastes bitter

Many consider bitterness a defect. The opposite is true: bitterness is a sign of quality. It comes from polyphenols, the olive's natural antioxidants. The more polyphenols in the oil, the more bitter it tastes and the more stable it is against oxidation. The same applies to the peppery pungency that you feel at the back of your throat and which sometimes causes coughing. In technical terms, this phenomenon is called pungency, and it is due to oleocanthal, a substance with anti-inflammatory properties. An oil that doesn't scratch at all has little of it. So, bitter is not necessarily bad. What you need to distinguish: Fresh bitterness comes with a green, fruity aroma and feels vibrant. The taste test: how to taste olive oil

The International Olive Council (IOC) defines three official quality characteristics for tasting: fruitiness, bitterness, and pungency. Here's how to test it yourself: 1. Pour a teaspoon of oil into a small glass, cover it with your hand, and warm it briefly with the warmth of your hand. 2. Remove your hand and smell. Fresh oil smells of cut grass, green tomatoes, artichoke, or almond. 3. Take a small sip and spread it in your mouth, inhaling air. This intensifies the aromas. 4. Swallow and pay attention to the finish. A slight scratch in the throat is good. Recognizing defects: when olive oil is bad

Bad olive oil can be reliably recognized by its smell and taste. Rancid oil smells pungent, waxy, or like old fat, which is the result of oxidation. Musty or earthy odors indicate fermentation or unclean processing. These defects are clearly defined according to the IOC tasting standard and lead to downgrading. In taste, bad oil appears flat, greasy, or leaves an unpleasant aftertaste. An oil that smells rancid or musty should no longer be used, regardless of the best-before date. What should be on the olive oil label

It is crucial whether the origin is specifically named. These five pieces of information distinguish a transparent product from an arbitrary one: Harvest year: without this information, you don't know how old the oil is. Cultivation region: a specific region, not just a country. Olive variety: single-variety or blend. Acidity: as a number, not a promise. Dark bottle: anyone who bottles their oil in clear glass has not fully thought through quality preservation. If the label only says "Olive oil from EU countries," the origin is deliberately kept vague. Such oils come from mixed batches of several countries and harvests.
