The Koroneiki olive
The Koroneiki olive is small but exceptionally oily. Under Crete's climatic conditions – mineral-rich soils, intense sunshine, and proximity to the sea – it produces oils with a high concentration of aromas. Fruity notes, balanced bitterness, and a peppery tingle are indicators of fresh polyphenols. These not only shape the flavor but also contribute to the oil's stability. We exclusively process single-varietal Koroneiki olive oil from Gouves.
Single variety
Acidity describes the proportion of free fatty acids and provides information about freshness and processing. The fresher the olives, the lower the value. Extra virgin olive oil may contain up to 0.8% acidity. Values below 0.3% are considered very good. Below 0.25% is exceptional. Such values result from healthy olives, hand-harvesting, and extremely short periods between harvesting and pressing. Any delay increases the acidity.
