South coast of Crete
On the south coast of Crete, sea salt is harvested through natural evaporation. Seawater is channeled into shallow basins and evaporates over weeks through sun and wind until crystals form. These are then scooped out by hand using wooden tools. The salt continues to dry in the sun – without washing, bleaching, or chemical treatment. No anti-caking agents, no additives. The process is time-consuming and yields small quantities.
Hand-scooped and dried
Salt is harvested seasonally, usually once a year. After being harvested, the salt dries in the sun. It retains its natural crystal structure and accompanying minerals from the seawater – including magnesium, potassium, and calcium. These influence its perception: the salt seems more balanced and less harsh than refined salt. The mineral content varies slightly from harvest to harvest.
As a finishing salt
Hand-harvested sea salt is designed to add precise accents at the end. The coarser crystals dissolve more slowly, creating targeted flavor highlights. Ideal for meat, fish, vegetables, salads, or fresh bread with olive oil. In Mediterranean cuisine, herbs carry the aroma, olive oil binds the flavors together, and salt adds the finishing touch. The more intense the herbs, the less salt is needed.
